Day 18: Butternut Squash

Butternut Squash is a classic fall produce item.  We actually grew it in our garden this year, but it was somewhat overcrowded by other items, and worms got into most of it.  We did enjoy some roasted butternut squash, though.  Wondering what it looks like?

You've probably seen it at the grocery store or Farmer's Market, and at this time of year the prices are the best.  If you've never cooked with this squash variety, I'd encourage you to choose one of the recipes I've collected for you.  Enjoy!

  1. I will admit - I fed Miriam butternut squash a lot - still do, actually ... But haven't every really had it myself! ;o) But just the other day, I was thinking we SHOULD eat it,too!!
Thanks for the recipes - I will have to give at least one a try!

  2. The twice baked squash looks really pretty! I don't think I've ever actually done anything with butternut squash but maybe if it's hidden in mac & cheese I could give it a try :)

  3. I LOVE butternut squash! The lasagna looks very interesting!

  4. We LOVE butternut squash -- thanks for posting all these new ways to use them. Our fav is a butternut squash pasta skillet with peas or a spinach & butternut squash lasagna.

  5. Um, delish. I love butternut squash. One of my ultimate fall favorites. Thanks for posting and stopping by my blog the other day. liz

I would love to get your feedback on any post! Comments make my day, and I will do my best to get back with you as soon as I can. Thanks!
